These will for sure be packed in my lunch bag tomorrow, also great bites before a long run or ride.
2 c. whole wheat flour (I used 1 c. ww, 1 c. coconut flour)
1 1/4 C old fashioned oats (I only had quick cooking, oh, well!)
1/2 C brown sugar
1 TBSP Chia seeds (buy at Fred Meyer, Whole Foods, etc.)
2 TBSP flaxseed meal (buy at above locations)
1 1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/2 C. unsweetened applesauce
3 TBSP canola oil
3 large egg whites
1 tsp. vanilla
1/4 c dried apricots
* I also added 1/4 C vegan chocolate chips
Preheat oven to 350.
Combine all the wet ingredients
Combine all the dry
Add the dry to the wet and mix.
Stir in apricots and chocolate chips
Drop 1 generous TBSP of batter onto the sheet (I rolled and pressed the dough since it was quite dense.)
I also rolled a bunch of them in coconut flakes for more flavor!
These are not the most beautiful of cookies and are quite dense so be prepared for a more filling and smaller cookie.
