Now that it's February, I am sure everyone's resolutions are in full swing! How are they all going? Like I hear from many of my clients, week days are spot on and weekends is where they really feel it falls apart for nutrition and exercise. One thing I like to suggest is to replace a date night out, with a date night in. That way you can control the ingredients, quality of food, and portions...you also get to snuggle up with your sweetie anytime you want. Sweet potato and black beans are a huge diet staple of mine as a vegetarian.
Here is one of my all time favorite, and I mean FAVORITE recipes for Mexican date night in!
Roasted Sweet Potato & Black Bean Tacos
2 large Sweet Potato, diced
Salt, Pepper, and Chili Powder Cumin
1 TBSP Olive oil or coconut oil melted.
1 cup Black Beans, drained and rinsed
1/4 cup diced Yellow Onion
4 Corn Tortillas (or flour, but corn tends to have less additives!)
1/3 cup diced poblano
Shredded Lettuce or Cabbage
Lime Wedges for squeezing
**I love arugula topped on it.
Preheat the oven to 350-400 degrees. I will toss these in and do some chores while they roast! Cut the sweet potato into 1-inch cubes or smaller, we leave the skins on. Drizzle the oil over the potatoes and coat with the seasonings. Toss and throw in a 9x13 baking dish. Roast until pieces are fork tender and slightly brown, about 30-40 minutes.
Sautee onion and poblano until tender and toss in the beans to warm and soften. Heat up the tortillas on the stovetop until warm and pliable! Top tortillas with potatoes, beans, and any garnish of choice!
We tend to make extra of the sweet potato and beans and use to top our salad or quinoa for lunch the next day! This is a great, clean recipe to keep you on track for your healthy eating goals.
