The combo of Saturday, an empty fridge, and my favorite Pandora Stations (Jim Croce, Stevie Wonder, & Ray Charles) helps me create the best little healthy snacks. I just got done making and testing them and rushed to get it down for you all before I forget!
Many of you know I love all things almond-so this is a healthy almond bar. Just like my Chocolate Protein Bites, I scoured the fridge and pantry to see what I could come up with for the weekend and week for a little healthy nibble.
With not much measuring I came up with these great bars! Also, we are out of bulk oatmeal, so I literally opened up packages of instant (totally plain) oats-no laughing. You could adjust the sweetness I bet with this...I know dates pack a sweet punch, so I added minimal honey.
Also cool...they are no bake!
Amy's OMG Throw Together Bars
1 cup pitted, packed Medjool Dates (we get our big bulk box from Costco-keep in fridge)
1.5 (ish) cups of oats
1 cup slivered almonds toasted (plus a little more for topping)
1/3 (ish) cup of natural almond butter
1 TBSP honey or maple syrup
Sprinkle of Chia Seeds
Shimmy of cinnamon
Splish (tsp?) of pure almond extract
Splash (1.5 tsp?) of pure vanilla extract
*Coconut oil spray (for hands/pressing).
1.) Prepare the dates by removing pits, press into cup, and throw in food processor. Process until the dates are in a small ball, almost a paste.
2.) Meanwhile, toast the almonds *(you could also use chopped)
3.) Place the oats, cinnamon, chia seeds, and a "splish" of almond extract ON the dry oats so it soaks up the almond flavor.
4.) Once the almonds are done place in the oat mixture. *I loved the slivered almonds because I could crush them up with my hand.
5.) Melt the vanilla, honey and almond butter over low until smooth and add to oats.
6.) Add date dough ball to mixture, as well.
I started with a wooden spoon then decided to abandon that and spray my hands with coconut oil spray and use my hands to mix.
Re-spray hands, and press into a pan. I used an 8x6 and it looks like it will do quite fine! Press leftover almonds onto the top and EAT THEM NOW.
